Procrastination Pays Off

Several weeks ago I took my herd (plus one)to the pumpkin patch to pick our pumpkins for Halloween. In our typical chaotic fashion, we'd put off out trip so long we got the dregs of the pumpkin patch, and the only good one left were the small pie pumpkins.

It got closer and closer to Halloween, and we were running out of time to carve, so we decided to paint them instead. But....we procrastinated on that too, until we were past Halloween.

Now I had 5 pie pumpkins sitting on my counter, so I decided to turn that lemon into lemonade, or more to the point, pumpkin into pumpkin pie! Now I have enough pumpkin puree for muffins, bread and a couple pies!

yummy. great title. as you know, i think carving is over-rated. but pumpkin muffins are not!
